Black beans have a starring role, to be sure, but they're balanced with tomatillos, corn, tomatoes and avocado. Cover and cook on LOW for about 8 hours or on HIGH for about 4-5 hours. Instead I thought I'd share a black bean soup I made over the weekend that was just killer. First, place all of the ingredients in a slow cooker.
